When & How
Lunch: this recipe can be used as the carbohydrate of your lunch. I suggest using a smaller potato as this recipe would be used as a side dish. Pair with a source of animal protein (seafood, meat, eggs, or ricotta)
Dinner: A complete and nourishing dinner
Ingredients
(1 serving
1 potato, medium/big size
1 sprig of rosemary
1 whole leek, medium size
Paprika
Endives, raw
Olive oil, salt & pepper
Method
- Preheat oven to 400F (200C) and line a baking sheet with parchment paper.
- Wash thoroughly and cut the potato into wedges keeping the skin. Place on the baking sheet. Toss with olive oil, black pepper, and (little) salt. Spread evenly on the baking sheet. Roast for approximately 20 minutes.
- Finely slice the leek. Heat some olive oil and the sprig of rosemary into a skillet. Cook leek until soft. You can add some water to keep it soft and prevent it from burning during cooking.
- Place cooked leek and some paprika into a blender. Blend until smooth. You can adjust the consistency with extra water.
- Enjoy dipping endives leaves and potatoes into the sauce!
Tips
- I recommend using yellow potatoes instead of white potatoes because white potatoes contain more starch and so more sugars.
- I recommend using organic potatoes and leaving the skin on to get in more fiber which helps decrease sugar absorption and keeps you satisfied for longer.
