Baked fish nuggets with chimichurri sauce

When & How

I recommend consuming this meal for lunch with a side of raw diuretic greens, such as endives, fennel or green salad with cucumbers.

Ingredients

(1 serving)

 

Fish Nuggets 

  • 150g cod
  • 1 egg
  • 65g almond flour
  • Seasoning (I used thyme, oregano, and black pepper) 
  • 1 tbsp almond milk 
  • Evo oil, salt & pepper 

 

Chimichurri Sauce (4 servings)

  • 60g fresh parsley
  • 3 tbsp dried oregano
  • 60g red onion, chopped
  • 1-2 clove garlic
  • Juice of half a lemon
  • ¼ tsp chili flakes
  • 65g olive oil 
  • 2 tbsp apple cider vinegar
  • Salt & pepper

 

Method

Fish Nuggets

  1. Preheat oven to 400 F (200 C) and prepare a parchment-lined baking sheet.
  2. In a bowl, whisk egg and almond milk together until combined.
  3. Place almond flour and spices into another bowl. Stir to combine.
  4. Cut cod in bite-sized cubes. Thoroughly coat each cube with the egg mixture first, followed by the almond flour mixture. 
  5. Transfer the cubes to the baking sheet. Sprinkle with olive oil, salt and pepper. Bake for 10 minutes. Remove from the oven and flip over—Bake for additional 10 minutes.

Chimichurri Sauce

  1. Add all the ingredients to a food processor/blender. Blend until somewhat smooth. 

 

Tips

  • You can substitute cod with halibut or salmon. 
  • You can substitute almond flour with other types of flour. Just remember that each flour has a unique nutritional profile.
