3-Ingredient sweet potato waffles (or pancakes)
- MEAL:
- Brekkie
- BENEFITS:
- Gluten free, Hair and skin health, Hormonal health
- DURATION:
- 15-20 min
When & How
Looking for a hormone-balancing, nourishing breakfast? These waffles (or pancakes) are for you! This recipe provides the perfect balance between proteins, carbohydrates, and fat.
The perfect toppings:
- A spoonful of nut butter
- Sliced nuts and fresh fruits
- Avocado and veggies
- Dairy or plant-based yogurt with or without fresh fruits
- Seeds with any of the above
What to avoid:
- Honey and other syrups. Sweet potatoes are naturally sweet and so already contain a good amount of sugars. I recommend avoiding additional sugars here to avoid glycemic peaks and a possible negative impact on energy levels.
Ingredients
(2 servings)
- 1 large sweet potato, cooked and flesh removed
- 2 eggs
- 3-4 tbsp almond milk
- 1 tsp cinnamon powder (optional)
Method
- In a bowl, mash all the ingredients together until smooth
- Heat the waffle iron and coat with little olive oil. If you’re opting for the pancake version, just heat some olive oil into a skillet.
- Add the batter and cook approx. 4-5 minutes for each waffle.
Benefits
SWEET POTATOES
Orange sweet potatoes are the types of potatoes with the highest antioxidant content. Potatoes are also rich in potassium which helps with fluid balance within the body and has myorelaxant properties, meaning it helps with muscle relaxation. This makes this recipe ideal as a post work out for muscle recovery/relaxation and in case of period cramps because it promotes ovary muscle relaxation, too.
EGGS
Eggs contain all the essential amino acids (the building blocks of protein). Egg yolk is rich in minerals, such as zinc, iron, and other important vitamins that nourish our skin, hair, nails, and ovaries. Indeed, eggs (especially the yolk) are a must for female hormonal health.
CINNAMON
Cinnamon has hypoglycemic properties and so it helps keep blood sugar in check and slow down sugar absorption from food.
