Ingredients
(One stuffed date corresponds to one serving)
Medjool dates
Cashew butter
Chocolate, 100% dark
Dried coconut (optional)
Method
- Slice each date lengthways with a knife and remove the pit.
- Stuff with cashew butter.
- Melt chocolate in a saucepan or microwave.
- Dip half of each date into the melted chocolate.
- Sprinkle the half-covered with chocolate with dried coconut (optional).
- Place the dates on parchment paper and freeze for 15/30 minutes (until the chocolate sets)
Tips
You can substitute cashew butter with other nut butters (almond butter, pistachio butter, peanut butter, etc.) or yogurt (dairy or non-dairy alternatives), or ricotta cheese.
