Cashew butter stuffed dates

When & How

A nourishing post-workout, a fueling pre-workout, a fulfilling snack and the perfect guilt-free sweet treat. 


(One stuffed date corresponds to one serving)

Medjool dates

Cashew butter 

Chocolate, 100% dark

Dried coconut (optional)



  1. Slice each date lengthways with a knife and remove the pit. 
  2. Stuff with cashew butter.
  3. Melt chocolate in a saucepan or microwave. 
  4. Dip half of each date into the melted chocolate.  
  5. Sprinkle the half-covered with chocolate with dried coconut (optional). 
  6. Place the dates on parchment paper and freeze for 15/30 minutes (until the chocolate sets)



You can substitute cashew butter with other nut butters (almond butter, pistachio butter, peanut butter, etc.) or yogurt (dairy or non-dairy alternatives), or ricotta cheese. 



This type of date is one of the healthiest natural sugars. They are rich in important minerals for bone health and in fiber which helps with intestinal transit and regularity.
