Choco Puffs

When & How

Breakfast: enjoy with your favorite milk or yogurt. You can also add some fresh fruit, such as a handful of berries or ½ banana

Snack: an easy-to-carry around and tasty snack on the go. I love taking some with me for those long afternoons working at the hospital or when I’m out all day.

 

Ingredients

(2 servings) 

  • 50g puffed Kamut
  • 2 eggs
  • 2-3 tbsp cacao

 

Method

  1. Preheat oven to 350 F (180 C) and line a baking sheet with parchment paper
  2. Crush the puffed Kamut using a meat tenderizer or a fork
  3. In a bowl, combine all the ingredients and stir until the “dough” form
  4. Shape into little balls (about ¼ tsp each) and place on the baking sheet
  5. Bake for about 15 minutes or until the cereals get crispy. 

Tips

  • You can also use rice cakes or other grain-based cakes instead of puffed Kamut or you can use other unsweetened puffed cereals.
  • The choco puffs are unsweetened, you can add a touch of sweetness by incorporating ½ smashed banana or a tsp of your favorite natural sweetener into the mixture (step 3)

Remember always to include a healthy source of carbohydrates in your breakfast to maximize energy levels and optimize performance (mental and physical) throughout the day).

EGGS

Eggs contain all the essential amino acids (the building blocks of protein) which balance out the carbs coming from kamut. Starting your morning with some high-quality proteins (animal proteins) will help maximize your energy levels for the whole day and will sustain muscles optimally in all their functions. In addition, egg yolk is rich in minerals, such as zinc, iron, and other important vitamins that nourish our skin, hair, and nails.

CACAO

Dark chocolate is rich in antioxidants and stimulates the release of endorphins which act as health boosters due to their ability to fight against anxiety, stress, and fatigue.
