When & How
Dinner: a light but nourishing option. Optimal after a weekend or a few days off from the diet or on those days where you feel the need for a detox.
You can add a side of raw fennel or cooked dandelion with olive oil, garlic and chili flakes.
Ingredients
(1 serving)
- 2 zucchinis
- ½ leek, medium size
- 2 tbsp psyllium flakes or powder
- ½ cup walnut, almond or hemp milk
- Olive oil, salt & black pepper
Method
- Slice zucchini and leek. Boil until slightly soft and finish cooking in a skillet with olive oil.
- Place zucchini, leek and plant-based milk in a blender. Blend until smooth.
- Drizzle some olive oil and (optional) chili flakes
