Diuretic creamy soup

When & How

Dinner: a light but nourishing option. Optimal after a weekend or a few days off from the diet or on those days where you feel the need for a detox.  

You can add a side of raw fennel or cooked dandelion with olive oil, garlic and chili flakes. 

Ingredients

(1 serving)

  • 2 zucchinis
  • ½ leek, medium size
  • 2 tbsp psyllium flakes or powder
  • ½ cup walnut, almond or hemp milk 
  • Olive oil, salt & black pepper

Method

  1. Slice zucchini and leek. Boil until slightly soft and finish cooking in a skillet with olive oil. 
  2. Place zucchini, leek and plant-based milk in a blender. Blend until smooth.
  3. Drizzle some olive oil and (optional) chili flakes

ZUCCHINI

Zucchinis are rich in potassium, an essential mineral with myorelaxant properties. Potassium enhances muscle relaxation helping with blood flow and also regulates fluids within the body. The net effect is increased diuresis. 

LEEK

Leek has potent diuretic properties and optimizes the action of potassium. This veggie is also rich in prebiotic fibers, the “feed” of our gut microbiome, which sustain the healthy growth of the gut bacteria and promote good gut immunity.

PSYLLIUM HUSK 

One of the richest sources of prebiotic fiber, the feed of our gut bacteria. Psyllium husk helps keep our gut healthy, preserving our digestive immunity, a functioning metabolism, and a regular bowel.
