When & How
Breakfast: a perfectly balanced and nourishing breakfast. This cookie contains all the macros (carbs, proteins and fats) and will keep you full and satisfied until lunch. You can pair it with a cup of coffee, tea, or a latte.
Snack: the perfect post-workout or filling snacks for those busy afternoons.
Dessert: a 100% guilt-free dessert.
Ingredients
(1 serving)
- 1 tbsp almond butter (or any other nut/seed butter)
- ½ apple (I used Honeycrisp type)
- 1 tbsp plant-based milk (I used my homemade hemp milk)
- 1 egg white
- Pinch of baking soda
- 2 full tbsp millet flour
- 4 tsp choc chips (100% dark chocolate)
- 1 tsp cinnamon powder (optional)
- 1 scoop collagen powder (optional – I used the bovine collagen from Vital Proteins)
Method
- Preheat oven to 350 F (180 C)
- Chop the apple into small-sized chunks removing the skin. Add chunks to a pan on medium heat with 5-6 tbsp of water or more. Cook for about 10-15 minutes until getting a soft consistency. Smash with a fork to make a puree.
- Add all the ingredients to a small bowl. Mix until well combined.
- Form a cookie on a lined sheet pan. Bake for 15-20 minutes. The cookie will not become as crunchy because of the apple puree. But don’t worry, it will taste delish!
Tips
- You can substitute almond butter with any other natural nut butter
- You can substitute oat flour with whole wheat flour or oat flour
