Ingredients

- 2 eggs
- ½ sweet potato, medium size (should be organic if you decide to leave the skin)
- 1/3 beet, medium size
- ½ avocado, ripe
- Baby spinach
- Chili flakes
- Olive oil, salt & pepper
Method
- Preheat the oven to 350 F (180 C) and prepare a parchment-lined baking sheet.
- Cut the sweet potatoes into bite-sized cubes. Transfer to the parchment-lined baking sheet. Sprinkle with olive oil, a pinch of salt (optional), and black pepper. Bake for about 20-25 minutes.
- Cut also the beet into bite-sized cubes. Boil until soft (approx. 20 minutes). Then finish cooking by gently stir-frying in evo oil. Finish cooking in olive oil will stimulate the liver.
- Heat some olive oil into a skillet over low heat. Crack the eggs. Cover with a lid and cook until the whites are completely set but the yolks are still runny (approx. 2 minutes). Slide the eggs out of the skillet and season with black pepper.
- In a bowl, combine all the ingredients. Drizzle with olive oil and chili flakes.

Finally, it is rich in potassium (more than a banana!), an essential mineral for bodily fluid balance and muscle relaxation.
