I recommend eating this side dish before eating your carbs to reduce sugar absorption.
- Pasta “aglio, olio, peperoncino”
- Quinoa with shrimps
- Farro with ricotta and thyme
- Pizza (you can keep mozzarella, but avoid mixing different types of animal proteins)
Ingredients
(2 servings)
- Olive oil, black pepper & salt
- 115g fresh mushrooms
- 1 fennel
- 1 tbsp apple cider vinegar
- 1 tsp dried thyme
- 1 clove garlic

Method
- Slice mushrooms. Heat some olive oil in a skillet with the garlic. Cook mushrooms until lightly roasted.
- Finely slice fennel and transfer to a bowl.
- Transfer the cooked mushrooms to another bowl. Marinate with 1 tbsp apple cider vinegar, 2 tbsp olive oil and dried thyme. You can add a pinch of salt and black pepper. Stir to marinate all the mushrooms thoroughly.
- Add 3 tbsp of the marinated mushrooms to the fennel salad. Drizzle with additional olive oil. Stir well and enjoy!
Tips
- You can play around with the dressings. Try it with the anti-cellulite avocado dressing, delicious!
