Halibut (or chicken) with summer salsa

When & How

A light lunch but packed with nutrients. This recipe will optimize thyroid function, metabolism, and energy levels while providing you with perfect nutrient balance. 

Combined with a side of

  • Salad greens with arugula to increase the metabolism-boosting properties of this recipe
  • Raw fennel or endives to increase the diuretic action of the recipe and help with water retention 
  • Grilled eggplant to boost energy levels and mental performance 

Ingredients

(1 serving) 

  • 180-200g halibut (you can substitute with chicken breast)

Peach avo salsa (2 servings)

  • 1 ripe white peach
  • 1 ripe avocado
  • ¼ red onion, minced 
  • 1 tbsp fresh cilantro, chopped
  • ⅓ jalapeño, sliced finely 
  • ½ Red bell pepper 
  • Lime juice from 1 lime
  • Salt, pepper and olive oil

Method

  1. Wash and cut the peach into little cubes. Cut the avocado into small cubes, too. 
  2. Combine all the ingredients for the salsa, adding 1 to 2 tbsp of olive oil. Mix well until all the ingredients are combined.
  3. Heat some olive oil in a skillet over medium heat. Cook chicken breast or halibut until slightly golden. 
  4. Transfer your protein to a plate. Top with the peach salsa.

WHITE PEACH
